Bacon Corn Chowder

Bacon and Corn Chowder with Fresh Bread

Ingredients:

  • 4-5 stalks of celery, diced
  • 2-3 small potatoes, diced
  • 1 small onion, diced
  • 4-5 strips bacon, diced
  • 1 can corn chowder, normal size
  • 1 cup milk
  • 1 cup water
  • random herbs

Directions:

1. Cook the celery, potatoes, onion, and bacon until bacon is done and veggies are tender. At the same time cook the potatoes in pot with 1 cup of water until tender.

2. After potatoes are tender, there should be little liquid left in pot. Add milk and corn chowder to potatoes. Stir in celery, potatoes, onion, bacon, and any seasoning you want. I used paprika, salt, pepper, and oregano.

3. Cook over medium heat until warm and serve. Garnish with parsley.

Makes about 3 good sized bowls of soup. Takes about 30 minutes start to finish.

Goes well over rice or with bread.
