
Pesto Farfalle with Grilled Chicken
This is a quick meal to make. Takes about 15 minutes start to finish. You can use pre-made pesto to make it faster.
Pesto Recipe
Ingredients:
- 1 cup basil leaves
- 1/3 cup grated parmesan
- 1/4 cup pine nuts
- 1/8 cup olive oil
- 2 garlic cloves, diced
- Salt/Pepper
Directions:
1. Combine all in a food processor and blend until smooth. Add salt and pepper to fit your taste.
This makes enough for about 3-4 dishes of pasta (one dish being what’s pictured). If you want to make more, just freeze whatever you don’t use. It’ll last a few months at least. If you just store it in the fridge, finish it within the week.
I like to make enough pesto to last a while and just freeze it in small Ziplocs that are enough for 2-3 portions.
